Ashwagandha and Goji Snack Bars | 10 min recipe

A new take on a midday snack

Total servings

  • 1 small to medium-sized tray


  • 3.5 ounces dates, soaked in hot water

  • 4 tablespoons cashew butter

  • 4 tablespoons maple syrup

  • 1 serving Ashwagandha

  • 1 tablespoon chia seeds

  • 1 teaspoon cinnamon

  • 1 ounce puffed rice

  • 1 ounce goji berries


  1. Wash and drain the dates; keep the water

  2. Add dates to food processor or blender

  3. Add cashew butter, maple syrup, Ashwagandha, and 3 tablespoons of the water from the dates

  4. Blend well until a paste forms [Note: you can add more water to desired texture]

  5. Stir in chia seeds, cinnamon, puffed rice, and goji berries

  6. Mix well until everything combines and sticks together

  7. Pour into a small to medium-sized tray and press down firmly

  8. Freeze for at least 2 hours

  9. When ready to serve, remove and cut into slices

  10. Enjoy!
